65 grams of granulated sugar
30 grams of corn flour
½ teaspoon cinnamon
¼ teaspoon nutmeg
300 grams peeled and chopped peaches
350 grams flour
175 grams butter
120 grams sugar
A little milk
16 lollipop sticks
Sour peach hearts to decorate
Icing sugar to decorate
The first step is to make the pop’s pastry base. Rub the butter into the flour until you form crumbs. Add in the sugar before adding sufficient milk to make a soft dough. Wrap the dough in plastic wrap and allow it to rest in the fridge while you make the peach filling.
In a saucepan, whisk together the cornflour, spices and granulated. Add in the peach pieces and toss to ensure that they are all coated. Gently cook, stirring until the sauce has become thick and bubbly, coating the peaches fully. Remove the pan from the heat and allow the peaches to go completely cold.
Preheat your oven to 220ºc and line cookie sheets with baking parchment. Roll out half your pastry on a floured surface. Cut out rounds using a 7 centimetre cutter; you will need 16 rounds to be placed on the cookie sheets. Press a lollipop stick into the centre of the rounds. Place a spoonful of the peach mixture onto each round, leaving a centimetre edge around the round. Brush the edge with egg.
Roll out the remaining pastry, cut out large rounds and cut each round into ½ centimetre strips. Weave the strips across each pop, using egg to seal the edges.
Bake your pops for approximately ten minutes or until they are golden brown. Allow your pops to cool completely on cooling racks.
While these pops look fantastically delicious straight from the oven, if you want them to look extra special, they need a little decoration. Sift the icing sugar and mix in a little water until you achieve a smooth consistency. Drizzle each of the pops with the icing and dot with sour peach hearts. Allow the icing to set before serving.
These pops can be stored in an airtight container for several days. However, once your family smell them baking, they are unlikely to last a day. If you are making your pops for a special occasion, they can make a lovely display by standing the lollipop sticks up in a shallow vase or dish. However, you display them; these pops are sure to be a real hit with all your guests.
