Sour Peach Hearts Cookies

To Make a batch of 18 Sandwiched Cookies or 36 Singles, you will need, 210 grams of flour, 1/4 teaspoon of salt, 2 teaspoons of baking powder, 65 grams of caster sugar, 50 grams of light brown sugar, 2 tablespoons of sour cream, 1 teaspoon of vanilla extract and 1 egg.
Preheat your oven to 175 degrees. In a large bowl, mix the salt, baking powder and flour until well combined. In another large bowl use an electric mixer to cream the sugars and butter together until light and fluffy. This can be done by hand with a spoon, but it will take several minutes rather than just one with a mixer. Mix the vanilla extract and egg into the mixture before adding in the sour cream. The mixture should be well combined and smooth. Fold in your dry ingredients until they are just incorporated. Avoid over mixing as this will make your cookies tough and hard.
Work one tablespoon of dough with your hands until you form a smooth ball. Place each cookie ball onto a baking tray, being sure to leave enough space between each ball. You should be able to fit approximately eighteen cookies onto one sheet, so you will need two trays for the full batch.
Bake the cookies for approximately fifteen minutes. The bottom of your cookies should be lightly golden brown when they are ready to be removed from the oven. Allow the cookies to cool slightly in place on the tray until you allow them to cool fully on a wire cooling rack.
To finish off the cookies and make the perfect double sandwich, you will need to ensure that the cookies have been totally cooled. Place a teaspoon of peach flavoured jam onto the bottom of a cookie and press it together with another cookie to create a sandwich.
Mix three tablespoons of milk into a two little bowls. Use red food colouring in one bowl to create a peachy pink shade, colour the other milk with yellow food colouring. Use a pastry brush to randomly colour the cookie with the yellow tinted milk, Fill in the gaps on the cookie with the red tinted milk, blending the two colours slightly in places. Try not to be too heavy-handed with the milk tint as you don’t want your cookies to become soggy. Once your cookie is tinted, coat the entire cookie with granulated sugar. The easiest way to do this is to put 50 grams of granulated sugar in a bowl and toss the sugar over the cookie. The cookies can be stored in an airtight container for several days.
